
Is there anything better than a fridge full of delicious leftovers – talk about feeling grateful! All the hard work leading up to turkey day rewards the cook with at least 4 days of kitchen freedom. Thanksgiving dinner is a meal that really gives back.
Leftovers can last a good week, and though replaying the big meal day after day is fine, sometimes you just want to change it up. Reinvent the “big bird” into a kid-tested, hand held, curried turkey pita pocket for leftovers everyone will love!
Curried Turkey Pitas
(serves 4)
2 pitas, halved
2 cups shredded roasted turkey
1/3 cup light mayonnaise
3/4 teaspoon curry powder
1/4 cup dried cranberries
3 celery stalks, sliced
1 green onion, sliced
Salt and pepper to taste
Combine shredded turkey with mayonnaise, curry powder, cranberries, celery and green onion. Add salt and pepper to taste. Spoon into pita halves and enjoy!
Nutrition Tip: Tell kids about the “superhero powers” of foods. Vitamin C in celery promotes a healthy immune system and keeps them from getting sick. Cranberries have disease fighting phytonutrients and will make them strong and fast!
